Healthy High Protein Muffins

Makes 12 muffins
Ingredients:
- 1 ½ cups rolled oats
- 1 cup oat flour
- 3 scoops vanilla protein powder (I recommend Limitless Pharma Whey Isolate)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- 2 ripe bananas, mashed
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup honey or maple syrup (optional for extra sweetness)
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (optional)
1. Preheat your oven to 350°F. Line a muffin tin with muffin liners or lightly grease it.
2. In a large bowl, combine the oats, flour, protein powder, baking powder, baking soda, cinnamon, and salt. Stir to mix everything evenly.
3. In a separate bowl, whisk together the mashed bananas, eggs, milk, honey or maple syrup, and vanilla extract until smooth.
4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in chocolate chips at this
5. Use a spoon or ice cream scoop to divide the batter evenly into the muffin tin (about 12 muffins).
6. Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can freeze them by placing them in a freezer-safe container or a resealable plastic bag.
